Grandma’s sandwich doesn’t just taste good, it looks good too!

These are two of the main ingredients to make Southern Chicken Salad — and of course the chicken.

In honor of National Sandwich Day (which was November 3rd), let’s celebrate by learning the best sandwich recipe ever — my grandmother’s family recipe, the Southern Georgia Style Chicken Salad Sandwich. 

 

Southern Georgia Style Chicken Salad Sandwich 

 

Ingredients: 

24 ounces chicken (chopped cooked, about 4 cups)  

2 to 3 tablespoons celery (finely chopped) 

1 tablespoon dill pickle relish (or finely chopped dill pickles) 

1 tablespoon sweet relish 

3 tablespoons of drained crushed pineapple 

1/2 cup of chopped grapes 

1/3 to 1/2 cup mayonnaise (or as needed to moisten) 

1/4 teaspoon salt (or to taste) 

1/8 teaspoon freshly ground black pepper 

 

Instructions: 

Gather the ingredients. 

In a medium bowl, combine the chicken and celery; toss to blend. 

In a small bowl, combine the relish with 1/3 cup of mayonnaise and the salt and freshly ground black pepper. Add the mayonnaise mixture to the chicken mixture and stir with a fork until well blended. Add more mayonnaise to moisten, if necessary. 

Taste and adjust seasonings with additional salt and pepper, as needed. 

Serve and enjoy!

Yield: 10 servings
